This event celebrates the cultivation of saffron and the traditional culture of Castilla-La Mancha.

Consuegra, in Toledo, celebrates the Saffron Festival in late October. Its goal is to introduce the traditonal culture of Castilla-La Mancha through its food, crafts, history and customs. The event includes a very diverse set of activities, beginning with the proclamation of the Dulcinea and her Ladies in Waiting.

Interesting moments include the “Mill of Peace and Love”, in which a 16th-century windmill grinds wheat into flour; a cooking competition celebrating the traditional cuisine of La Mancha; saffron picking competitions where the goal is to extract the spice from the flower as quickly as possible; and a festival of traditional music and dance featuring groups from all over the region. Saffron growers are the central figures of this fiesta, which has been held since 1963. Exhibitions, cultural activities and sport competitions complete the programme.
